Sunday Funday! This semester we have started hosting our small group at our house on Sunday nights. If you know me well, you know that this makes me beyond happy! I love having people over, especially when we are having the chance to be fed physically and spiritually. There is just something special about breaking bread with people, that just makes doing life together easier. It gives us a chance to reflect and share on the past week together and to strengthen our connections to one another.
This week we had a baked potato bar. Y’all when you have a lot of people to feed and you want something for everyone, do some type of bar. Great examples are: pizza, tacos, soups, and even just desserts. For this potato bar I offered a variety of toppings including, mini pepperoni, grilled chicken, bacon, cheeses, butter, sour cream, Greek yogurt, and green onions to name a few. The best part of this whole meal, was that my potatoes cooked all day while I napped!
For the baked potatoes, I use the following:
1 5lbs. bag of russet potatoes
2 Tbsp. Olive oil
Start by scrubbing your potatoes well. Russets are usually pretty dirty spuds. Next, brush potatoes with olive oil using a pastry brush. Then place potatoes on a foil sheet and sprinkle liberally with sea salt. Wrap and place potatoes in a slow cooker for 10 hours on low or 6 hours on high. Check potatoes around 8 hours on low and 4 on high for desired consistency. Once they are done, you can leave them in the slow cooker on warm until ready to serve. That’s it! These are a great idea for Super Bowl Sunday, as you can assign guest different toppings and you can be free to spend time with your guest while your slow cooker does all the work!

- Mozzarella cheese
Buffalo Chicken Potato
- Grilled chicken
- Buffalo sauce
- Blue cheese / ranch dressing
- Green onions
- Seasoned ground beef (we used taco soup, as my mom had brought a bowl down with her)
- Sour cream / Greek yogurt
