I love easy recipes! Anything that has tons of flavor, can be put on the table quickly, and has at least some healthy ingredients is a win at our house. Some nights ( mostly the weekend when life isn’t as crazy) you want to take your time and truly enjoy the experience of making a meal. However, some nights you just want to feed everyone and crash on the couch until your husband wakes you up and tells you it’s time for bed. This recipe is one of those that comes together quickly and leaves everyone feeling satisfied.
Sausage and White Beans
- 1 tablespoon olive oil
- 14 oz. Smoked sausage ( I use turkey sausage), cut into 1/2 inch rounds
- 1 teaspoon garlic, minced
- 1 cup chicken broth
- 30 oz. Cannellini beans, drained and rinsed
- 15 oz. Fire roasted tomatoes
- 1 teaspoon Italian seasoning
- 1 /4 teaspoon crushed red pepper flake
- 6 oz. fresh baby spinach
- Grated parmesan cheese
- Cooked rice
Heat olive oil in a large skillet over medium high heat. Add sausage and cook until nicely browned on each side. Add garlic and cook for 1-2 minutes or until fragrant. Add broth, beans, tomatoes, seasoning, and red pepper. Simmer over medium heat for about 15 minutes, or until slightly reduced.
Stir in spinach a little at a time until the full amount has wilted into the dish. Serve over hot rice and garnish with parmesan cheese.
This dish is super satisfying and a great dish to have in your back pocket on busy nights when all you want is to enjoy a warm meal with the people you love most.
