The Dreaded Summer Lunch

It’s arrived, the dreaded time of the year when all of your kids are home and all they want to do is EAT. Anyone else ever wonder how they survived the whole school year only getting lunch and maybe a snack there? I know it can’t just be my kids that all of a suddenly feel like they must consume 4,000 calories a day or they will die.

Summer lunches are a real struggle for us. My kiddos take their lunch every day during the school year, so I feel guilty about just giving them cold sandwiches when they are on summer vacation. However, I find it difficult to think of what else to feed them for lunch. Sometimes we do leftovers, and that helps not to waste food, but this week we have VBS, so we have zero leftovers . So, yesterday after I left class I picked up the makings for these grilled cheese sandwiches, and not one kid came back to me saying they needed a snack all afternoon. It was a win for everyone!

Apple Butter and Ham Grilled Cheese

Makes 1 Sandwich

  • 2 slices Sourdough bread
  • 2 tablespoons apple butter
  • 2 slices Provolone Cheese ( smoke or not)
  • 2 slices Mozzarella Cheese
  • 2 oz. spiral sliced ham ( you can buy this in a package where you see the spiral sliced hams)
  • 1 tablespoon Dijon mustard
  • Butter for your griddle

To assemble sandwiches:

Spread apple butter on one side of a slice of Sourdough, and spread Dijon on the other slice. Place provolone cheese on top of the apple butter, and mozzarella slices on top of Dijon slice. Place the ham on either side and fold over to make a sandwich.

Warm your griddle on medium heat, and brush with melted butter. Place sandwich on warmed griddle and cook until toasted and lightly brown. Place more butter on griddle and flip sandwich. Cook until the last side is toasted and lightly browned.

These can be kept on a wire rack on baking sheet in the oven if you make multiple sandwiches.

I served these up with some crab seasoning chips, and they were delicious.

This was much better than a frozen chicken nuggets, our usual go to for a quick lunch!
