My Instant Pot is a lifesaver for when I am short on time, and I don’t want to heat my entire house by having my oven on for a long period of time. We make all kinds of things in it! Everything from risotto and rice to these ribs. I like that I can put something in, leave it ( but don’t leave the house, these things still give me some anxiety!), and come back to a tender piece of meat or perfectly cooked rice.
I have seen people rave about making ribs in the Instant Pot, but I’m not going to lie, I was a little skeptical. I mean ribs are one of those pieces of meat that are best cooked low and slow for maximum flavor and tenderness. However, last week I thought would be a good time to try it, as we were short on time and wanting something different for a mid week meal.
I used a rub that I have been using for years on my crock pot pulled pork, and I decided to try my hand at a homemade BBQ sauce. The sauce was quick and easy with great flavor.
- 1 Pound brown Sugar
- 1 cup kosher salt
- 1 1/2 ounces smoky paprika
- 1 tablespoon black pepper
- 1 1/2 teaspoon red pepper
- 1 teaspoon cinnamon
- 2 tablespoons garlic powder
- 2 tablespoons dry mustard
Sift everything together 3 times to make sure it blends completely. Leftover can be stored in a jar with a tight fitting lid or a ziplock bag. ( This list forever if you keep moisture out)
Honey BBQ Sauce
- 2 cups ketchup ( Heinz is my favorite, but whatever floats your boat)
- 1 cup dry white wine ( I never have wine on hand, so just use chicken stock)
- 1/4 cup honey
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tablespoon dried parsley flakes
- 2 tablespoons apple cider vinegar
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Sriracha sauce
Bring ingredients to a boil in a large saucepan; reduce heat, and simmer stirring often for 15 to 20 mins. I life to use my immersion blender at the end for a smoother sauce.
Instant Pot Baby Back Ribs
- 1 – 2 racks of ribs ( about 4lbs.) , it was just me and the kids, so I only did one rack
- BBQ Sauce
Prepare ribs by removing thin membrane from the bone side of the ribs. I used the tip of a sharp knife to get it started, and it just peeled off. You have to do this, otherwise your ribs will not reach that fall off the bone consistence you want.
Rub both sides of the ribs with the prepared rub and place on a cookie sheet to rest while you prepare your Instant Pot.
Place your trivet in the bottom of your Instant pot and and add 1 cup of water. With your ribs standing on the side, coil the ribs around in a spiral starting with the outside and working your way to the center.
Set your pressure cooker for manual for 20 mins. After the 20 mins, has passed, do a manual release. Immediately place ribs with meaty side up on a baking sheet. The meat should just be pulling away from the bone.
Coat the ribs with the sauce and either grill or broil in the oven. I broiled in the oven for 3-4 minutes or just until the sauce was sticky and browned.
My kiddos really loved these and I loved that they were quick and easy!
